Citrus and Bleu Cheese Bruscetta

3 grapefruits, peeled-seeded-diced

3 medium oranges, peeled-seeded-diced

2 tbsp butter

2 tbsp diced red onion

crushed red pepper and sea salt, to taste

3 ounces finely crumbled bleu cheese

1 baguette, sliced and lightly toasted (you can also use melba toast or water crackers)

Heat the butter in frying pan until foaming. Add in the diced citrus and onion and saute for 1-2 minutes. Stir in sea salt and crushed red pepper to taste, and cook for an additional 2 minutes. Top baguettes with the grapefruit mixture, sprinkle with the Bleu cheese and serve.
