Cacao-Mint Vegan Ice Cream
3 large bananas (diced/frozen overnight)
2 Tbsps almond milk
Seeds from 1 split vanilla bean
1 Tbsp cacao powder
3 Tbsps cacao nibs
2 Tbsps chopped mint, plus more for garnish
Pulse the bananas, almond milk, vanilla seeds & cacao powder in a food processor for 2 minutes. Scrape down sides & continue pulsing until mixture is texture of soft serve ice cream, about 3 minutes. Add cacao nibs & chopped mint and pulse a few more time. Garnish with reserved fresh mint leaves and serve.
