5 Ingredient Polenta Pizza Bites
(preheat oven to 350 degrees – line a cookie sheet with foil)
1 tube of organic polenta
1/3 cup of your favorite marinara sauce
2 firm Roma tomatoes (sliced)
1/2-3/4 cup shredded Mozzarella cheese
3 tablespoons freshly chopped basil
Cut the polenta into 1/4 inch slices. Preheat a skillet over medium heat. (you can add a thin layer of oil, if needed) Fry the polenta rounds until a nice golden brown, about 6-8 minutes on each side.
Arrange the fried polenta rounds in a single layer on your prepared cookie sheet. Top each polenta round with a bit of marinara sauce, shredded mozzarella and fresh chopped basil. Bake on center oven rack for 10-12minutes, or until cheese is melted. Makes 12-15 pieces, or about 2-3 servings as a main dish, or 4-5 servings as an appetizer.
