5 Ingredient Green Bean Salad with Walnuts and Dried Cranberries
1 pound fresh green beans (ends trimmed and rough chopped)
1/2 cup finely chopped walnuts
1/2 cup chopped dried cranberries
2 tablespoons diced red onion
olive oil (to drizzle)
Boil or steam the green beans JUST until bright green, about 3-4 minutes. Drain and immediately plunge into a bowl of ice water to stop the cooking process and keep the green beans crisp. Drain and pat dry any excess water with a paper towel.
Put the green beans into a mixing bowl along with the remaining ingredients. Season with sea salt and black pepper to taste and toss to evenly coat and blend ingredients. Serve immediately or keep chilled in the fridge until ready to serve. Makes 4-6 servings.
