5 Ingredient Cheesy Black Bean and Pasta Casserole
1 pound package of penne pasta (can also use elbow, spiral, bow tie, or similar shaped pasta)
2 cups diced tomatoes
2 cans (15.5 ounce each) black beans (rinsed and well drained)
1 jar (26-30 ounce) of your favorite marinara sauce
2 cups shredded Mozzarella cheese
Preheat oven to 375 degrees and lightly oil the bottom of a 2 quart baking dish.
Cook the pasta according to package directions, rinse and drain.
Return the cooked, drained pasta to saucepot and stir in the diced tomatoes, black beans and marinara sauce. Transfer mixture into your prepared baking dish and top evenly with the shredded Mozzarella cheese. Bake on center oven rack for 35-40 minutes, until cheese is melted and top is golden brown. Remove from oven and let stand for 5 minutes before serving.
* Optional add-ins: diced onion – sliced black olives – diced green peppers – chopped artichoke hearts – corn.
